Easy Air Fryer Homemade Berry Pop Tarts
Description
This recipe starts by simmering mixed berries with sugar and water to create a thick homemade jam, finished with lime juice for brightness. The jam is spooned onto pie crust rectangles, edges brushed with milk, and topped with another crust piece sealed by fork marks. The pop tarts are chilled before brushing with an egg yolk and milk wash to enhance browning.
Cooking in the air fryer at 350°F yields crisp, golden pastries with warm fruit filling. Optionally, a glaze made from confectioners' sugar, milk, vanilla, and pink food coloring is drizzled over the cooled tarts for sweetness and visual appeal.
These pop tarts can be filled with fresh jam or store-bought alternatives. Variations include apple-cinnamon or chocolate fillings. Expect some filling leakage during cooking; simply enjoy any escaped filling. Adjust cooking time as air fryer models differ.
Ingredients
For the jam:
- 1 Cup mixed berries 175 grams
- ½ Cup sugar 125 grams
- ⅓ Cup water 79 milliliters
- 1 Tablespoon lime juice
For the glaze:
- 1 Cup confectioners sugar 250 grams
- 4 Tablespoon milk
- 1 Teaspoon vanilla extract
- 1 Food Coloring pink, drop
For the pop tarts:
- 2 pie crust disks
- 1 egg yolk
- 3 Tablespoon milk plus more for brushing
Instructions
- Preheat Air Fryer to 350F/180C.
- Prepare the jam filling: In a small pot over medium heat combine the berries, sugar and water. Bring to a simmer and cook about 20 minutes, stirring constantly, or until the jam is thick.
- Remove from heat and stir in the lime juice. Set aside and let it cool down completely.
- Prepare the Pop Tarts: Lay out both pie crusts and cut each into 8 rectangles. Spoon around 1 Tablespoon into the middle of the rectangle and brush the edges with milk.
- Top each with another pie crust rectangle. And with the help of a fork, seal the edges.
- Polk holes in the top of the tart and repeat the process with the rest of the rectangles, creating 8 finished tarts.
- Refrigerate them for 30 minutes. In a small bowl combine the egg yolk with the milk and brush the top of the tarts with the egg wash.
- Place 2-4 tarts in a single layer in air fryer basket, depending on the size of your basket.
- Cook for about 10 minutes or until golden.
- Repeat with remaining tarts.
- Transfer tarts to a wire rack and cool completely for about 25 minutes.
- Once cool, prepare the glaze. In a small bowl, combine the confectioners sugar, milk, vanilla extract and food coloring. Using a spoon, glaze each pop tart and decorate with sprinkles.

Notes

- Cooking times may vary with air fryer models; begin with less time and add more as needed, checking for golden color.
