  • 1 ¼ cup almond meal ideally blanched - no flecks of almond skin, aka ground almonds, grainy blanched almond flour, 140g
  • ½ cup powdered sugar confectioner's sugar, 70g
  • teaspoon salt
  • 1 egg lightly beaten (*see notes for vegan alternatives, white
  • ½ teaspoon almond extract

Instructions

  1. Put the almond meal (ground almonds), powdered sugar and salt into a food processor and whiz briefly until it’s well mixed and a little finer.
  2. Add the lightly beaten egg white and the almond extract, then pulse until it’s mixed and forms a ball. If it’s still very sticky, add another tablespoon of powdered sugar and process again.
  3. Your homemade almond paste is now ready to use, or you can wrap it and store it in the fridge for up to 10 days.

Notes

  • Use blanched almond meal without skin to ensure a smooth almond paste without dark flecks.
  • For vegan versions, replace egg white with honey, corn syrup, agave nectar, or 3 tablespoons aquafaba; adjust powdered sugar and almond meal accordingly to achieve proper consistency.
  • Almond paste can be stored wrapped in the refrigerator for up to 10 days.
