  • 1 carrot sliced
  • 1 rib celery sliced
  • ½ onion diced
  • 2 cloves garlic minced
  • 5 cups beef broth reduced sodium
  • 1 cup water
  • 14 ounces diced tomatoes with juices, canned
  • 1 potato diced
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • salt to taste
  • black pepper to taste
  • 1 cup alphabet noodles uncooked

Instructions

  1. In a large pot over medium heat, saute carrots, celery, onion, and garlic until onion begins to soften.
  2. Add broth, water, tomatoes, tomato paste, potato, and seasonings. Bring to a boil and turn down to a simmer for 15 minutes.
  3. Add alphabet noodles and cook for 7-8 minutes or until noodles are cooked al dente.

Notes

  • Fresh vegetables are interchangeable with frozen ones according to availability.
  • To increase protein content, add cooked ground beef, shredded chicken, or mini meatballs while simmering.
