This Chicken Piccata features thinly pounded chicken cutlets cooked until golden brown, then simmered briefly in a bright sauce of lemon and lime juice, capers, and chicken broth. The sauce is finished with butter to add richness, while fresh parsley and dill contribute herbal notes. The combination of lemon and capers gives the dish a sharp, tangy flavor, balanced by the mild, tender chicken. Serving with lemon and lime slices enhances the citrusy freshness. It's a flavorful main course showcasing the delicate textures of chicken enhanced with simple, classic ingredients.

Description

The Easy and Healthy Chicken Piccata with Lemon Recipe centers on boneless, skinless chicken breasts carefully sliced and pounded thin to ensure tenderness and even cooking. The chicken is seasoned and pan-seared in a mix of olive oil and butter until it forms a golden crust, creating a pleasing contrast between the crispy exterior and juicy interior. The pan sauce combines chicken broth, fresh lemon and lime juices, capers, and chili slices to provide acidity and a hint of heat, simmered to slightly reduce and concentrate flavors. Butter is whisked in off the heat to create a glossy, smooth sauce. Fresh parsley and dill added at the end bring herbal brightness and freshness to the finished dish.

This chicken piccata offers a balance of textures and flavors, pairing the tender poultry with the tart, lively sauce. It is served with slices of lemon and lime for added zest and visual appeal. This dish is well suited as a simple yet sophisticated entree that can be accompanied by light sides such as steamed vegetables or rice to complement the acidity of the sauce.

The recipe notes emphasize the importance of pounding the chicken thin for tenderness and achieving a golden-brown sear by allowing the chicken to cook undisturbed on medium heat. The browned bits left on the pan from cooking the chicken are deglazed with broth and citrus juices, which enhances the complexity of the sauce. This careful attention to texture and flavor balance makes the piccata a thoughtfully prepared dish.

Ingredients

Servings
  • 1 chicken breast boneless and skinless, large fillet
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp butter unsalted
  • 1/2 cup chicken broth
  • 1/4 chili
  • 2 tbsp lemon juice
  • 1 tbsp lime juice
  • 2 tbsp capers drained
  • 2 tbsp parsley chopped, fresh
  • 2 tbsp dill chopped, fresh
  • lemon for serving, slices
  • lime for serving, slices

Instructions

  1. Cut the chicken breast fillet into three portions. Pound chicken into thin chicken cutlets, season with salt and pepper. Let them sit for 5 minutes.
  2. Cut 2-3 slices lime and lemon for serving. Squeeze 2 tablespoons of lemon juice and 1 tablespoon of lime juice.
  3. Heat 1 tbsp of olive oil and 1 tbsp of butter on medium-high heat in a non-stick skillet. When the butter has melted and the skillet is hot, add the chicken fillets in a single layer. Cook for 5-6 minutes until both sides of the chicken are golden brown on both sides, then set aside.
  4. To the same skillet, toss in chopped chilies and capers. Add 1/2 cup of chicken stock, fresh lemon juice, and lime juice. Scrape the brown bits and let the lemon sauce simmer for 2 to 3 minutes until it reduces in volume.
  5. Reduce heat to medium low, and whisk in the remaining butter until melted and well blended. Return cooked chicken to the skillet, cover with lemon caper sauce, and cook for an additional 2-3 minutes for flavors to combine. Once done, sprinkle with parsley and dill.
  6. Transfer the chicken piccata to a plate, garnish with thin slices of lemon and lime, and drizzle with the chicken piccata sauce.
  7. Your healthy and delicious dinner is now ready to serve with your favorite side.Buon appetito!

Notes

  • Thinly pounding the chicken breast ensures even cooking and a tender texture.
  • Preheat the pan and cook the chicken without moving it to develop a golden brown crust.
  • Deglaze the pan by scraping up browned bits with broth and citrus juices to add depth to the sauce.
  • Use fresh herbs like parsley and dill at the end to brighten the dish.
