Filling:

  • 4 apple peeled, cored and sliced thinly, medium tart
  • ½ cup brown sugar
  • 2 to 3 tablespoons corn starch
  • 1 tablespoon cinnamon
  • ½ teaspoon salt
  • 2 tablespoons lemon juice

Topping:

  • 1-2 pear peeled, cored and sliced thinly

Glaze:

  • 2 teaspoons brown sugar
  • 2 teaspoons coconut oil
  • 2 teaspoons lemon juice

Instructions

  1. Preheat the oven to 375 degrees F. Lightly grease a 9” pie plate and set aside. Roll out or press dough into a pie plate, spreading evenly, crimp edges with your fingers.
  2. Place all filling ingredients in a large bowl and toss well to coat. If liquid is pooling in the bottom of the bowl, stir in an additional tablespoon of cornstarch. Spoon filling into crust, and smooth top.
  3. Heat glaze ingredients in a small saucepan over low heat until melted and combined, and set aside. Top filling with sliced pears in a decorative circular pattern, as pictured. Brush top liberally with glaze, cover with foil and bake for 35-40 minutes until crust is browning and pears are soft and golden.
