Easy Apple Pie Recipe with Store-Bought Crust

Report
This apple pie uses honeycrisp apples sliced thinly and arranged in a lattice design over a store-bought pie crust. The filling is enriched with homemade apple pie spice, vanilla, and a mix of white and brown sugars creating a subtly spiced, sweet tart. The crust is baked until golden, while the lattice allows steam to escape, contributing to a delicate texture. The recipe includes tips on preparation and storage to maintain freshness and presentation.

Description

The recipe begins by bringing premade pie crusts to room temperature and preheating the oven. Honeycrisp apples are peeled, cored, and sliced into thin rings approximately 1/8 inch thick, arranged in a circular, pyramid-like shape on the crust. The top crust is cut into strips and woven into a lattice to cover the apples, allowing steam release and decorative texture.

Butter is melted and whisked with flour on the stove top to form a thickened sauce mixed with sugars, apple pie spices, and vanilla extract, which is poured over the apple arrangement before baking. The pie bakes at 350°F until crust browns and filling sets, with advice to shield the crust if it browns too quickly.

The finished pie should cool before slicing to allow the filling to firm. Proper slicing and the use of an apple corer slicer can yield thinner, uniform apple slices for a pleasing texture. Leftovers can be refrigerated covered and reheated in an oven or microwave.

Ingredients

Servings
  • 6-7 honeycrisp apples
  • 2 pie crust 9 inch
  • 1 tick butter
  • 2 tbsp apple pie spice see note below
  • ¼ cup all-purpose flour
  • 1 tsp vanilla extract
  • ½ cup white sugar
  • ½ cup brown sugar
  • ¼ cup water

Homemade Apple Pie Spice

  • 1 ½ tbsp ground cinnamon
  • ½ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp ground ginger

Instructions

  1. Allow pre-made pie crust to come to room temperature.  Preheat the oven to 350°F.
  2. I use a Apple Corer Slicer for this step as it's the most efficient. Wash the apples prior to running through the Apple Corer Slicer. If you do not have it, wash, peel and remove the cores from the apples. Slice all of the apples into thin rings, about ⅛” inch thick.
  3. Layer in one of the premade pie crusts into your pie dish. You'll need to confirm with your instructions whether or not to grease the pan.
  4. Place apple slices into pie crust, arranging in a circle and building in a pyramid-like shape. There are photos in the blog post to show you exactly how this should look if you are confused!
  5. Roll out the other pie crust on a cutting board. Then, using a pizza cutter, cut ¾” strips.
  6. Create a lattice design by arranging half of the strips vertically and the other half horizontally across the pie.
  7. Next, heat a sauce pot to medium-heat. Melt butter in the pot. Then, whisk in flour. Allow a paste to form while whisking. It should be fragrant.
  8. Add in brown sugar, apple pie spice, vanilla extract, white sugar, brown sugar, and water. Whisk again.
  9. Pour the wet mixture over the entire pie. Use a rubber brush to spread it evenly on top.
  10. Bake the apple pie for 35-45 minutes at 350°F until the crust is golden and apples are cooked. You might want to put the pie on a baking sheet to catch any drippings.
  11. Let the pie cool completely before serving (this allows the filling to firm up).
  12. Serve warm with vanilla ice cream or a glass of milk! ENJOY!

Notes

  • Store leftover apple pie in the refrigerator covered with foil or airtight container for up to 5 days.
  • Reheat pie slices in an oven at 350°F or in 60-second microwave intervals until warm.
  • Uniform thin slices of apple (about 1/8” thick) are important for consistent texture; an apple corer slicer or a very thin knife can be used for this.
  • If the crust browns before the apples are fully cooked, cover the pie loosely with foil to prevent burning.
  • Allow the pie to cool completely before slicing to ensure the filling sets nicely.
