Description
This pasta dish begins by simmering spaghetti and frozen peas together, allowing the peas to cook through in the last minutes. Meanwhile, shallots, garlic, and diced back bacon cook in olive oil over low heat until the bacon reaches desired crispness and aromatics develop.
After draining the pasta and peas, a portion of the starchy pasta water is reserved and added back to the pan along with fresh spinach. This moisture helps wilt the spinach and brings the ingredients together in a light sauce formed by bacon fat and pasta water. The dish is finished with shaved parmesan and fresh basil, balancing salty, savory, and fresh herb flavors.
Options include using smoked back bacon for richness or substituting with turkey bacon for lower fat. Adding cream or crème fraîche can create a saucier variation. Vegetables like kale, mushrooms, peppers, or courgettes can be added alongside shallots for variation. Serving this dish with extra vegetables helps balance its richness.
Ingredients
- 140 g spaghetti
- 0.5 tablespoon olive oil
- 3 shallot diced
- 2 garlic diced, clove
- 3 rasher Bacon diced
- 70 g peas frozen
- 60 g spinach
- 20 g parmesan shaved (to serve)

Instructions
- Put 140 g Spaghetti into a saucepan of boiling water and simmer for 12 minutes. 5 minutes before the pasta is cooked, add 70 g Frozen peas.
- Heat 0.5 tablespoon Olive oil in a frying pan and add 3 Shallots, 2 Garlic clove and 3 rasher Bacon (chopped) and cook on a low heat for 4-5 minutes, until the bacon is cooked to your liking.
- Drain the pasta and peas (reserving a little of the water) and add it to the frying pan with 60 g Spinach. Add about 100ml of the water and stir through.
- Serve topped with 20 g Parmesan and Fresh basil.
Notes
- Smoked back bacon provides a richer flavor due to higher fat content, but turkey bacon can be used to reduce calories.
- The starchy pasta water creates a light sauce; add cream or crème fraîche if a saucier texture is preferred.
- Swap spinach for kale or add vegetables such as mushrooms, peppers, or courgettes with the shallots for extra flavor and nutrients.
