Easy Baked Paleo Donuts
Description
This recipe blends nut and grain-free flours with natural sweeteners and flavoring to produce paleo-compliant donuts. The dough is portioned manually into silicone donut molds, smoothed, and topped with crushed candy canes before baking at 350°F. After baking for 30 minutes, the donuts must cool for about an hour in the molds to firm up and allow easy removal without breaking.
The texture is tender but structurally stable due to the mix of almond and coconut flours with added tapioca flour for binding. The peppermint extract and candy cane topping give a seasonal flavor and festive appearance.
Silicone molds are essential for flexibility in removal; greased metal pans do not work due to the donuts’ delicate nature. Frosting should only be applied when the donuts are fully cooled to avoid crumb issues. Variations include using paleo chocolate chips or sprinkles instead of candy canes for other occasions.
Ingredients
- 1 cup almond flour
- ¼ cup coconut flour
- 2 tablespoons tapioca flour

- ⅓ cup maple syrup
- 1 teaspoon peppermint extract
- 2 teaspoons baking powder
- ¼ cup egg white
- 2 tablespoons avocado oil
- 2 tablespoons non-dairy milk
Instructions
- Preheat the oven to 350F.
- In a large bowl, combine the dry ingredients and mix well to ensure no clumps.
- One by one add in the wet ingredients.
- Stir until combined, leaving no dry ingredients on the bottom of the bowl. Add in the cady canes.
- Manually portion the batter into the silicone molds.

- Bake in the oven for 30 minutes and let them completely cool for 60 minutes.
- Remove the donuts from the molds and glaze them as per preference.
Notes
- Manually spoon the batter into silicone molds; it does not pour smoothly like traditional batter.
- Smooth and pat down batter to remove air pockets and ensure even rising.
- Cool donuts in molds for at least one hour before removing to prevent breaking.
- Use silicone molds for easy donut removal; greased metal pans are not suited for this batter.
- Wait to frost until donuts are completely cool to avoid crumb fallout.
- Substitute candy canes with paleo chocolate chips or sprinkles for other flavors.
- Nutrition info excludes frosting.
