Easy Baked Salmon

Easy Baked Salmon features a whole skin-on fillet spread with a herb butter made from garlic, dill, parsley, thyme, lemon zest, salt, and pepper before baking. The butter infuses the fish with moistness and herbal flavor while the high-heat bake lightly cooks it to tender, flaky perfection. Serving with lemon wedges brightens the rich fish.

Description

This recipe calls for a whole skin-on salmon fillet, preferably pin-boned by a fishmonger for convenience. A softened butter mixture is combined with minced garlic, fresh chopped herbs—dill, parsley, and thyme—plus lemon zest, salt, and black pepper. The salmon’s surface is dried thoroughly to help the butter adhere evenly.

The herb butter is spread all over the flesh side, providing moisture and infusing the salmon with aromatic flavors as it bakes at 400°F. Baking times vary from 10 to 15 minutes, depending on thickness and desired doneness, resulting in tender, flaky salmon with a subtle herb and citrus note.

After baking, the salmon rests briefly to allow juices to settle. It’s then served in slices, drizzled with the melted herb butter and fresh lemon juice. The dish works well as a main course with simple sides or salads to balance its richness.

Ingredients

Servings
  • 2 kg (4lb) salmon I always ask the fishmonger to pin-bone the fish for me but to leave the skin on, side
  • ½ cup butter softened
  • 4 garlic minced, cloves
  • 2 tbsp dill finely chopped, fresh
  • 1 tbsp parsley finely chopped
  • 1 tbsp thyme finely chopped
  • 2 tsp lemon zest
  • 2 tsp salt
  • 1 tsp black pepper
  • lemon to serve, wedges

Instructions

  1. Preheat the oven to 400°F/205°C.
  2. Combine the softened butter with minced garlic, finely chopped herbs, lemon zest, salt and pepper.
  3. Dry the surface of the salmon with paper towels. The butter won't stick to the salmon if the surface isn't dried well.
  4. Spread the butter all over the flesh-side of the salmon then transfer to a baking sheet or roasting pan lined with parchment paper.
  5. Place the salmon into a hot oven and bake for 10-15 minutes or until the salmon is done to your preference.
  6. Remove the salmon from the oven then allow to rest for 5 minutes.
  7. Slice and serve drizzled with the butter and lemon juice.
