Easy baked sticky apricot salmon

Easy baked sticky apricot salmon features skin-on salmon fillets coated with a glossy glaze made from apricot jam, soy sauce, lemon juice, garlic powder, and a touch of spice. The salmon is baked at a high temperature while frequently spooning the thickened glaze over the fish, resulting in a sweet, tangy, and sticky surface with a tender flaky interior. This preparation highlights a balance of fruity sweetness and savory umami flavors, making it suitable for serving with a variety of sides.

Description

Easy baked sticky apricot salmon combines fresh salmon fillets with a homemade apricot glaze that includes apricot jam, soy sauce, and lemon juice, enhanced by garlic powder and optional red pepper flakes. The glaze is cooked until thickened before being poured over the salmon, which is baked skin-side down in a foil-lined tray. Frequent basting during baking creates a shiny, sticky coating that clings to the salmon. The cooking time is brief, ensuring the salmon stays moist and tender. This dish offers a harmonious blend of sweet and savory tastes with a lightly spiced kick if red pepper flakes are included.

The texture is both tender and moist inside with a slightly sticky, flavorful glaze on the outside. The salmon's skin is left on to provide structure and helps retain moisture.

This glazed salmon fits well as a main course for lunch or dinner and can be paired with steamed vegetables, rice, or a fresh salad. The straightforward preparation makes it accessible for home cooks looking for a flavorful baked fish option.

Ingredients

Servings
  • 800 g (1,7lbs) salmon (trimmed into 4 skin-on fillets)

For the apricot glaze

  • ¾ cup (180ml) apricot jam also known as apricot preserves
  • 1-2 tbsp (15-30ml) soy sauce
  • 2 tbsp (30ml) lemon juice
  • red pepper flakes optional, pinch, also known as chilli flakes
  • ½ tsp garlic powder
  • 2 tbsp (30ml) water
  • salt to taste
  • black pepper to taste

Instructions

  1. Pre-heat the oven to 220ºC/430ºF.
  2. Combine all the glaze ingredients and bring to a simmer in a small saucepan. Allow to cook for a few minutes until the glaze has thickened and coats the back of a spoon easily. Adjust seasoning (add more soy or lemon juice if necessary) and allow to cool slightly.
  3. Line a baking tray with foil and grease with a little oil/cooking spray. Place the salmon fillets on the tray, skin-side down. Pour over the glaze and place in the oven.
  4. Allow to bake for 7-10 minutes, spooning the glaze over the salmon every 2-3 minutes, until the salmon is cooked to your preference, and is glossy and sticky.
  5. Remove from the oven and allow to rest for a few minutes before serving with sides of your choice.
