Easy Banana Peach Bread
Description
This Banana Peach Bread recipe begins by combining ripe mashed banana, applesauce, sugar, canola oil, and vanilla extract, providing moisture and natural sweetness. In a separate step, flour is mixed with baking powder, baking soda, salt, and cinnamon before being folded gently into the wet ingredients. Fresh diced peaches add bursts of juicy flavor throughout the bread.
The batter is poured into a greased loaf pan and baked at 350°F (176°C) for about an hour, with doneness checked by a clean toothpick test. The baking produces a tender loaf with a moist crumb balanced by aromatic cinnamon and the gentle sweetness of banana and peach.
This bread is suitable as a breakfast or snack and showcases how fruit purees and fresh fruit can lend moisture and flavor without relying on eggs or butters.
For best results, measure flour by spooning it into a cup and leveling to avoid dense bread. Avoid over-mixing the batter to keep the texture light. If desired, swap applesauce with peach puree for enhanced peach flavor. To prevent excessive browning during baking, cover the top with foil if needed.
Ingredients
- 1 banana peeled and mashed, ripe
- ¾ cup applesauce
- 1 or 1 ¼ cup sugar depending on your sweetness preference, cup
- 2 teaspoons vanilla extract
- ½ cup canola oil
- 2 cups peach fresh, diced
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 teaspoons cinnamon
Instructions
- Preheat the oven to 350 degrees F ( 176 degrees C). Grease a bread loaf pan.
- In a large bowl, blend the banana, applesauce, sugar, oil, and vanilla. Add the flour, baking powder, baking soda, salt, and cinnamon; mix just to combine. Stir in the peaches. Pour the batter halfway into the prepared bread pans.
- Place them into the preheated oven and bake for about an hour. Check to see if it’s fully baked by placing a toothpick or fork into the middle of the loaf, if it comes out clean, it’s finished. If it has batter on it, bake for another 15 minutes.
Notes
- Measure flour by spooning and leveling to ensure accurate quantity, preventing dense bread.
- Mix batter just enough to combine; some lumps are fine to avoid tough texture.
- For more peach flavor, replace applesauce with simmered peach puree of similar consistency.
- If the bread browns too fast, tent foil over the loaf during baking to protect the crust.
