Easy Beef Enchiladas

Easy Beef Enchiladas feature ground beef seasoned with taco mix and diced green chiles, wrapped in tortillas, and topped with red enchilada sauce and shredded cheddar cheese. Baking the assembled enchiladas melts the cheese and melds flavors, yielding a hearty, savory dish. This recipe suits casual dinners and can be served alone or with sides like rice or beans.

Description

These enchiladas are made by cooking ground beef with taco seasoning and adding green chiles for mild heat and flavor. The filling is placed in tortillas with shredded cheddar cheese before being rolled and arranged in a baking pan coated with enchilada sauce. Additional sauce and cheese cover the rolled enchiladas, which are baked at 375°F until bubbling and cooked through, about 20-25 minutes.

The finished dish offers a combination of tender beef filling with melted cheese and a tangy, mildly spicy sauce. They are a convenient preparation that balances protein, spices, and cheese wrapped in soft tortillas. They pair well with various Mexican-inspired side dishes or can serve as a filling main course.
