This bok choy recipe sautés the vegetable halves briefly in avocado oil infused with garlic and ginger, then finishes by steaming with water to keep the leaves tender and the stems crisp. Description

The method begins by heating avocado oil and quickly infusing it with minced garlic and ginger, which release their aroma and flavor. Adding the bok choy sliced in half allows each piece to evenly cook while letting the oil and aromatics coat the surface. Stir-frying for two minutes softens the stalks slightly while keeping a slight crunch.

Steaming the bok choy under a lid with a small amount of water for an additional two minutes tenderizes the leaves and helps retain moisture. Ending with salt and pepper seasoning allows the natural sweetness and fresh bite of the bok choy to come through clearly. The dish is best served fresh.

Using tongs makes stirring easier and helps keep the bok choy intact during cooking. While best freshly made, leftovers may be stored in an airtight container in the refrigerator for a few days.

  • 2 tablespoons avocado oil
  • 4 baby bok choy sliced in half
  • 1 teaspoon ginger minced
  • 2 garlic minced, cloves
  • 2 tablespoons water
  • salt
  • black pepper

Instructions

  1. Cook the ginger and garlic. Heat the avocado oil in a wok or sauté pan on medium. Add the minced ginger and minced garlic and stir for 30 seconds.
  2. Stir-fry the bok choy. Add the bok choy and use tongs to turn and stir-fry the bok choy in the garlic and ginger for 2 minutes.
  3. Steam the bok choy. Pour two tablespoons of water into the pan, cover, and let it cook for 2 minutes more.
  4. Serve. Turn off the heat, add salt and pepper, and serve.
