Easy Bolognese Sauce (No Wine)

Easy Bolognese Sauce uses ground beef, chopped tomatoes, and vegetables like carrot, celery, onion, and bell pepper simmered together with Italian herbs and stock to create a rich, thick meat sauce without wine. The sauce is cooked until the tomato breaks down and the liquid reduces, yielding a hearty base ideal for pasta dishes.

Description

This recipe combines browned ground beef cooked with diced onion for a deep base flavor, then adds chopped carrots, celery, bell pepper, garlic, and a cube of beef stock. Tinned chopped tomatoes are incorporated and the sauce simmers gently until it thickens and the vegetables soften. Italian herbs and parsley add aromatic notes and layered flavor.

The absence of wine keeps the flavor straightforward and accessible, while cooking the beef until it is nicely browned intensifies the meaty taste and dryness of the sauce. The result is a thick, well-rounded Bolognese sauce with a mix of tender vegetables and minced meat suited for spooning over pasta or using in other dishes.

There is no added water as the tomatoes provide sufficient liquid, and helping the sauce cook until very soft ensures it binds well. Adjust the seasoning with salt and pepper at the end to taste. This sauce is practical for everyday meals with flexible portion sizes.

Ingredients

Servings
  • 500 g ground beef 1.1 lb, or minced beef
  • 2 tins tomato 2 x 400 g, 13oz, chopped
  • 1 carrot
  • 1 onion large
  • 1 celery stick
  • ½ yellow bell pepper
  • 2 tablespoon vegetable oil
  • ½ teaspoon salt
  • teaspoon black pepper
  • 1 tablespoon italian herbs
  • 1 tablespoon parsley chopped
  • 1 cube beef stock
  • 3 garlic cloves

Instructions

  1. Heat up the oil in a large pan, then peel and chop the onion and add it to it, leaving it to cook on a medium heat until golden.
  2. Add the ground beef, and stir continuosly, until the beef is browned all over.
  3. Chop the carrot, pepper, garlic and celery stick, and add them to the pan together with the beef stock.
  4. Add the chopped tomatoes and leave to cook until the sauce is reduced and thickened.
  5. Season with salt, pepper, add the Italian herbs, and parsley, and remove from the heat.

Notes

  • The recipe ingredients scale with serving size for easy adjustment.
  • Browning the ground beef well deepens the flavor and creates a drier sauce texture.
  • Stir the mince continuously while browning to avoid sticking and achieve even color.
  • There is no need to add water; cook until tomatoes are fully softened and the sauce thickens.
