Easy Bread Pudding with Blackberries

Easy Bread Pudding with Blackberries combines country bread cubes with juicy blackberries soaked in a rich custard of cream, half-and-half, eggs, sugar, and warm spices. This dessert bakes to a bubbly golden top with a slightly jiggly center, offering a comforting texture contrast between the tender bread and bursts of fresh or frozen berries. It’s a satisfying treat that can be prepared ahead with an extended refrigeration step to soak the bread well.

Description

Easy Bread Pudding with Blackberries features cubes of country bread mixed evenly with blackberries in a baking dish, then soaked in a frothy custard made from cream, half-and-half, eggs, sugar, vanilla, cinnamon, nutmeg, and salt. Baking uncovered at 350 degrees F for over an hour develops a golden, bubbly surface while the interior stays soft and slightly wobbly. The pudding highlights the contrast of the bread’s tender crumb with the sweet, lightly spiced berries. This recipe benefits from refrigerating the custard-covered bread and berries for at least two hours to let the flavors meld and the bread fully absorb the custard. For serving, allow the pudding to cool about 20 minutes after baking to set slightly, making it easier to slice and enjoy warm.
