Easy Brownie Fruit Pizza Recipe
Description
Easy Brownie Fruit Pizza begins with a prepared brownie mix batter spread evenly in a 9-inch springform pan and baked until set. Once cooled, it is topped with a fluffy cream cheese frosting, made by beating cream cheese, powdered sugar, lemon juice, vanilla extract, and cinnamon until light and airy. Fresh fruit, including strawberries, blueberries, raspberries, and kiwi slices, decorate the frosted brownie, giving bursts of bright color and fresh flavor.
The dessert balances the dense, chocolatey base with a creamy and lightly sweet topping. The citrus and cinnamon in the frosting add subtle complexity without overpowering the sweetness of the brownies or fruit. Serving chilled helps maintain the frosting's texture and freshens the fruit.
This fruit pizza is ideal for casual gatherings or special occasions, offering a visually appealing and delicious combination of textures and flavors. It slices easily for sharing and looks festive with the colorful fruit arrangement.
The recipe notes mention storing the assembled dessert for a short time in the refrigerator and suggest variations in fruit choices or frosting alternatives like whipped cream. Toppings can be customized, and the dessert can be prepared in advance and assembled just before serving.
Ingredients
For the Brownie Crust
- 18 ounces brownie mix (1 box), Ghirardelli recommended
- ¼ cup water
- ⅓ cup vegetable oil
- 1 egg large
For the Frosting and Toppings
- 8 ounces cream cheese room temperature (1 brick)
- 1 cup powdered sugar
- 1 teaspoon lemon juice
- ¾ teaspoon vanilla extract pure
- ½ teaspoon ground cinnamon
- 1½ cups mixed berries I used strawberries, blueberries, and raspberries, fresh
- ½ cup kiwi freshly sliced and peeled
Instructions
- Preheat oven to 350°F. Prepare a 9-inch springform pan by spraying it with nonstick spray. Set aside
- Prepare the brownies according to instructions on the back of the box. Spread the batter into the prepared springform pan and bake according to package directions. A little brownie mix might leak out while baking but it shouldn’t be much.
- While the brownies bake, use a hand mixer to beat together the cream cheese, powdered sugar, lemon juice, vanilla extract, and cinnamon. Beat until light and fluffy, about 5-7 minutes.
- Take the brownies out of the oven and set aside. Make sure the brownie is completely cooled before frosting.
- Frost brownie pizza with cream cheese frosting and top with strawberries, blueberries, kiwi, and raspberries.
- Refrigerate for 30 minutes before serving. Slice, plate and enjoy.
Notes
- Store assembled brownie fruit pizza in the refrigerator for up to 4 hours to maintain freshness.
- You can store the frosting and brownie crust separately in the refrigerator for up to 3 days; assemble and add fruit just before serving.
- Feel free to vary the types of fruit used to customize the topping as desired.
- For a lighter topping, substitute whipped cream for the cream cheese frosting.
- Adding caramel sauce as a drizzle offers an extra flavor twist if desired.
