Easy Bruschetta Chicken

Ingredients

  • 1 pound chicken breast pounded to 1-inch thick and cut into four 4-oz. portions
  • ¼ teaspoon garlic powder
  • ¾ teaspoon salt plus more to taste, divided
  • ¼ teaspoon black pepper to taste
  • 1 teaspoon Italian seasoning
  • 2-3 Tbsp. olive oil divided
  • 1 asparagus ends trimmed, cut into 2-inch pieces, bunch

Bruschetta Topping:

  • 2 cups tomato from 4-5 medium tomatoes, diced vine-ripened
  • ¼ cup red onion diced
  • ¼ cup basil thinly sliced
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • 2 tablespoons balsamic glaze optional*

Instructions

  1. In a small bowl combine garlic powder, ½ tsp. salt, pepper, and Italian seasonings. Whisk to combine. Sprinkle seasoning ingredients over chicken breasts and press in lightly.
  2. Add 1-2 tablespoons olive oil and chicken breasts to a large skillet over medium heat. Cookfor 7-8 minutes per side, or until internal temperature reaches 165 degrees.
  3. For the Tomato Bruschetta: While chicken is cooking, combine tomatoes, red onion, basil, 1 tablespoon olive oil and ¼ teaspoon salt. Mix until combined.
  4. Remove chicken from the pan once cooked and add 1 tablespoon olive oil, asparagus, a splash of water, and ¼ teaspoon salt. Cook for 4-5 minutes or until crisp and bright green.
  5. Serve chicken and asparagus with bruschetta topping and a drizzle of balsamic glaze. Enjoy!

Notes

  • Glaze. The balsamic glaze is NOT calculated in the nutrition facts.
  • Chicken. Tenderize the chicken before cooking for the best results.
  • Tomatoes. Campari tomatoes make the most flavorful bruschetta.
  • Storage. Keep this bruschetta chicken and asparagus in an airtight container in the fridge for up to 3 to 4 days. It's best if you keep the bruschetta topping separate from the chicken and asparagus.
  • Freezing. The chicken can be safely frozen for up to 4 to 6 months. Do not freeze the bruschetta, it will not thaw correctly.
