Description
To prepare bruschetta, slices of baguette are toasted under a broiler until crisp and lightly browned. The topping combines fresh tomatoes chopped finely, minced garlic, finely chopped onion and basil, freshly grated Parmesan cheese, and olive oil. Salt and pepper are adjusted to taste to balance freshness with seasoning.
This topping is spooned generously over the warm, toasted bread, producing a contrast of textures with the juicy tomato mix and crunchy bread base. Optionally, a balsamic reduction glaze can be drizzled over for a sweet and tangy note.
Balsamic reduction can be homemade by simmering balsamic vinegar until syrupy, adding a concentrated flavor. Leftover tomato topping keeps for a few days chilled but should be used promptly to maintain freshness. The bruschetta is best assembled just before serving to keep the bread crisp.
Ingredients
- 1 baguette cut in 1/2 inch slices
- 2 cups tomato finely chopped, see recipe notes
- 2 cloves garlic minced
- ¼ medium onion finely chopped
- 6 leaves basil finely chopped
- ½ cup Parmesan Cheese freshly grated
- ¼ teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
- 3 tablespoon olive oil extra virgin

Instructions
- Toast the bread. Turn your oven on to the broil setting. Place the baguette slices on a large baking sheet. Place under the broiler and toast on both sides for about 1 to 2 minutes per side. Set aside.
- Prepare bruschetta. In a medium size bowl toss together the tomatoes, garlic onion, basil, cheese, salt, pepper and olive oil. Taste the tomato mixture for seasoning and adjust with salt and pepper if needed.
- Finish dish. Spoon bruschetta on the toasted bread slices and drizzle with balsamic reduction if preferred.
Notes
- Balsamic reduction is a glaze made by simmering balsamic vinegar until thickened; it adds a sweet tang when drizzled on bruschetta.
- Leftover tomato topping can be stored in the refrigerator for up to 3 days but keep separate from toasted bread to prevent sogginess.
- Do not leave assembled bruschetta out at room temperature for more than 2 hours to avoid spoilage risks.
