Description
This recipe starts by creaming together peanut butter and softened butter before mixing in brown sugar, vanilla extract, and salt. Gradually incorporating powdered sugar forms a stiff dough that’s shaped by hand into tablespoon-sized balls. After freezing briefly to firm up, the peanut butter balls are dipped into melted semisweet chocolate blended with coconut oil or vegetable shortening to thin it out for a smooth coating. Once the chocolate hardens, the candies can be enjoyed.
The buckeyes showcase a creamy, rich peanut butter interior contrasted with a firm chocolate exterior, providing both texture and flavor balance. The addition of brown sugar helps adjust sweetness and texture, although it can be omitted if desired.
The candies store well in an airtight container and can be kept at room temperature for a short period, refrigerated for weeks, or frozen for months. They make a nostalgic and shareable sweet treat, especially popular around holidays.
Ingredients
- 2 cups peanut butter creamy, not natural peanut butter
- ½ cup butter softened, unsalted
- 2 Tablespoons light brown sugar firmly packed (see note)
- ¼ teaspoon salt
- 1 ¼ teaspoon vanilla extract
- 3 ¼ cups powdered sugar
- 2 cups semisweet chocolate chips
- 1 teaspoon coconut oil or vegetable shortening
Instructions
- Combine peanut butter and butter in the bowl of a stand mixer and beat until well-combined.
- Add brown sugar, vanilla extract, and salt. Stir well.
- Gradually add powdered sugar until completely combined. Scoop into Tablespoon-sized balls and roll with the palms of your hand until smooth and round.**
- Place on wax-paper lined cookie sheet and freeze for 15-20 minutes.
- While peanut butter balls are chilling, combine chocolate chips and coconut oil (or vegetable shortening) and heat in the microwave in 25-second intervals (stirring well in between) until chocolate is smooth and completely melted. Pour into a deep dish (I use a wide cup).
- Remove peanut butter balls from freezer, spear the top of each peanut butter ball with a toothpick and, holding the toothpick, dip each buckeye ball into the melted chocolate.
- Return to cookie sheet and remove toothpick. Use the pads of your fingers to smooth over the toothpick mark.
- Allow chocolate to harden before eating and enjoying (placing them in the refrigerator will speed up the process of the chocolate hardening!).
Notes
- Brown sugar contributes to texture but can be omitted without affecting the rest of the recipe.
- If using salted butter, do not add extra salt to the dough.
- To firm up sticky dough, add powdered sugar gradually until it holds shape well.
- Chocolate melting wafers may be used instead of chocolate chips and coconut oil, though omit shortening if using wafers.
- Store buckeyes in airtight containers; keep at room temperature for up to 2 days, refrigerate for 2-3 weeks, or freeze for longer storage.
