Easy California Prune Oatmeal Squares

These California Prune Oatmeal Squares combine a sweet prune filling with a crumbly oatmeal topping made from a mix of oats, flour, sugar, and butter. Baked into golden squares, they offer a moist, fruity center with a tender, lightly crisp crust, making a satisfying snack or dessert with wholesome ingredients.

Description

The recipe prepares a prune filling by processing pitted California prunes with lemon juice, cinnamon, brown sugar, and vanilla into a smooth paste. This filling is layered between a pressed oatmeal crust and a crumbly topping composed of oats, flour, sugar, baking soda, salt, and softened butter. Baking at 350°F until golden delivers a balanced texture with a moist, flavorful center and a crisp, crumbly exterior.

The squares hold well once cooled and can be cut into portions for convenient snacking or dessert. The prune filling adds natural sweetness and moisture with a subtle tartness from lemon.

For the California Prune filling

  • 8 oz. prunes California, pitted and dried
  • 1/4 cup lemon juice fresh
  • 1/4 cup brown sugar or coconut sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon

For the oatmeal crumb topping

  • 1 1/2 cups oatmeal quick cook, dry
  • 1 1/2 cups all-purpose flour
  • 1 cup brown sugar packed, or coconut sugar
  • 1 1/2 ticks unsalted butter softened, 12 Tbsp
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 350° F. Spray an 8x8 inch baking pan with nonstick baking spray. Set aside.
  2. Remove butter from fridge to soften.
  3. Make the prune filling: in a food processor, process 8 oz. of California Prunes (chop them into smaller pieces if needed) with ¼ cup lemon juice, cinnamon, brown sugar and vanilla extract. Process for 1-2 minutes or until prunes are blended well into a paste.
  4. Make the oatmeal crumb mixture next: In a medium sized bowl, combine the dry ingredients: oats, flour, sugar, baking soda and salt.
  5. With clean hands, mix softened butter into the dry ingredients until the mixture becomes crumbly. Press half of the oatmeal mixture down into the pan to crease the crust layer.
  6. Evenly spread the prune mixture on top.
  7. Then sprinkle the remaining crumb mixture on top and press lightly into the prune paste.
  8. Bake for 35 minutes or until the top is golden brown. Let cool completely and then cut into squares.
