  • cup black beans drained and rinsed, optional, canned
  • 8 ounces tortilla chips
  • 4 cups Mexican cheese blend or cheddar and Monterey Jack cheese, shredded
  • 4 green onions thinly sliced, divided

Instructions

  1. Preheat the oven to 375°F.
  2. In a skillet, brown the ground beef over medium heat until no pink remains. Drain excess fat.
  3. Stir in the taco seasoning, water, and black beans if using. Simmer for 4 to 5 minutes or until the water is mostly evaporated.
  4. Meanwhile, spread the tortilla chips onto a rimmed baking sheet. Top with half of the cheese, the beef mixture, and then the remaining cheese. Sprinkle with half of the green onions.
