Easy Cheesy Nachos
Description
This recipe starts by browning lean ground beef, then seasoning it with taco seasoning and simmering briefly with water and optional black beans to meld flavors without making the beef too wet. Tortilla chips are spread on a baking sheet and layered with half the shredded cheese, the beef mixture, and the remaining cheese.
Baking at 375°F just long enough to melt the cheese creates a bubbly, gooey texture that complements the savory beef. Fresh green onions add a mild onion flavor and a slight crunch when sprinkled before and after baking. The recipe suggests serving the nachos with sour cream and salsa for added moisture and flavor, balancing hot and cold elements.
Using pre-shredded cheese blends saves time, and avoiding overly thin or flavored chips helps maintain structural integrity and flavor balance. The mixture of hot, melted toppings with fresh cold garnishes delivers layered textures.
Ingredients
- 1 pound ground beef lean
- 1 ounce taco seasoning 1 packet
- ⅓ cup water
- ⅔ cup black beans drained and rinsed, optional, canned
- 8 ounces tortilla chips
- 4 cups Mexican cheese blend or cheddar and Monterey Jack cheese, shredded
- 4 green onions thinly sliced, divided
- toppings as desired see notes
Instructions
- Preheat the oven to 375°F.
- In a skillet, brown the ground beef over medium heat until no pink remains. Drain excess fat.
- Stir in the taco seasoning, water, and black beans if using. Simmer for 4 to 5 minutes or until the water is mostly evaporated.
- Meanwhile, spread the tortilla chips onto a rimmed baking sheet. Top with half of the cheese, the beef mixture, and then the remaining cheese. Sprinkle with half of the green onions.
- Bake for 8 to 10 minutes or until cheese is melted and bubbly.
- Remove the pan from the oven and add the remaining green onions & desired toppings. Serve with salsa and sour cream.
Notes
- Substitute ground beef for shredded or ground chicken for a different protein option.
- Cook the beef mixture until most liquid evaporates to prevent soggy nachos.
- Use plain tortilla chips instead of flavored ones to avoid overpowering the toppings.
- Combine warm toppings like cheese and beef with cold toppings such as fresh tomato, cilantro, and pickled jalapeño for varied texture and flavor.
- The recipe yields about eight servings; nutritional information excludes optional sour cream and salsa.
