Description

Easy Cheesy Pea Fritters bring together frozen or fresh peas gently cooked and cooled before being blended with eggs and fresh spring onions. Adding grated cheddar cheese and self-raising flour creates a batter that fries into small, tender cakes with a slight crust on the outside. The inclusion of finely chopped mint or parsley adds freshness without overpowering the peas' natural sweetness. Cooking the fritters on medium-low heat and covering the pan helps them cook evenly and retain moisture inside.

Ingredients

  • 300 grams petit pois or regular garden peas, frozen
  • 2 egg large
  • 3 spring onions finely chopped
  • 100 grams cheddar cheese grated
  • 100 grams self-raising flour
  • 1 tablespoon mint finely chopped, or parsley, fresh
  • ½ teaspoon salt
  • 1-2 tablespoons cooking oil for frying

Instructions

  1. Fill a small to medium saucepan halfway with water and bring it to a rapid boil. Add the peas and bring it back up to a boil. Cook for 3 minutes from the moment the water resumes boiling.
  2. After 3 minutes, drain the peas in a colander and rinse them under cold water to stop the cooking process.
  3. Add the two eggs, chopped spring onion and HALF of the peas to the bowl of a food processor.
  4. Blend the ingredients in the food processor until finely chopped and well blended.
  5. Transfer the mixture to a large bowl and add the remaining peas, cheese, self-raising flour, chopped mint (or parsley) and salt.
  6. Fold all the ingredients together until well combined.
  7. Heat the oil in a large frying pan and then turn the heat down to medium-low. Spoon heaped tablespoons of the pea fritter batter into the pan. Shape them roughly into fritter shapes by forming a circle and then slightly flattening each cake.
  8. Place a lid on the pan (optional, but helps even cooking) and cook each fritter for 2-3 minutes per side over low-medium heat.
  9. Cook until both sides are golden brown and crispy. Listen out for a satisfying, hollow 'plop' sound when you turn them over.
  10. Serve hot with a dollop of Greek yoghurt and sides of choice.
