Easy Chicken and Leek Pie
Description
The recipe starts by cooking bite-sized chicken breast pieces in olive oil, followed by adding sliced leeks and crushed garlic cloves to soften and create a flavorful base. Combining this mixture with crème fraîche, grated cheddar cheese, and Dijon mustard produces a creamy and tangy filling. The mixture is seasoned and then placed in a baking dish.
Instead of traditional pastry, the pie is topped with mashed potatoes mixed with cheddar cheese, which melts and forms a browned crust during baking. This topping adds a smooth, fluffy texture contrasting the rich filling beneath. Baking at moderate heat allows the flavors to meld and the topping to set.
Optional additions like spinach or mushrooms can introduce extra texture and nutrients. The dish suits a hearty dinner and pairs well with green vegetables or a salad. It offers a homestyle alternative to pastry pies with a mashed potato topping.
Variations include using pastry as a topping or swapping out some chicken for mushrooms to vary texture and reduce meat content. Adjusting cheese quantity can modify richness and calories.
