Easy Chicken Goulash
Description
This chicken goulash begins by gently frying onions and bell peppers in olive oil until softened, then adding smoked lardons that brown slightly to create a smoky flavor backbone. Smoked paprika and caraway seeds bring warmth and depth, while garlic adds pungency. Chicken thigh pieces are incorporated along with canned chopped tomatoes, salt, and pepper, then simmered for 45 minutes with the lid on, or alternatively baked at a moderate oven temperature.
The slow simmer creates tender chicken infused with smoky spices and a thick tomato-based sauce. The dish can be served alongside starches like rice, pasta, or potatoes and garnished with optional sour cream and parsley to add freshness and creaminess.
This goulash can be cooked longer for a more concentrated flavor and may also be prepared in a slow cooker for convenience. It freezes well, making it practical for meal planning.
Ingredients
- 2 tablespoons olive oil
- 2 onion sliced, medium
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- 90 g lardons I use the little packs of Tesco Finest Lardons, smoked or chopped streaky bacon
- 4 teaspoons smoked paprika
- 1 teaspoon caraway seeds
- 3 cloves garlic crushed or grated
- 800g g chicken thigh cut into bite size pieces
- 400 g canned chopped tomatoes
- salt to taste
- black pepper to taste
To serve...
- rice mash, baked, or plain
- pasta
- potatoes
- bread
- sour cream optional
- 2 tablespoons parsley optional
Instructions
- Put the onion, peppers and olive oil in a large saucepan and fry gently, with the lid on for 5 minutes, until the onions and peppers are softened but not brown.
- Add the lardons (or chopped streaky bacon) and turn up the heat. Fry for 3 minutes until the lardons, peppers and onions have a little colour.
- Turn down the heat and add the paprika, caraway seeds and garlic. Fry for 1 minute.
- Add the chicken, tinned tomatoes, salt and pepper and bring to the boil.
- Turn down the heat, put the lid on and cook for 45 minutes. Add a little splash of water if it gets too dry. Alternatively you can cook this stew in the oven. Cook at 180C (160C fan/ gas mark 4 / 350F) for the same length of time (or longer!)
- Serve with rice, sour cream and a sprinkling of parsley.
Notes
- Cook the goulash for 45 minutes for perfect doneness; up to 1.5 hours will intensify the flavor.
- Slow cooker method: transfer ingredients after initial steps and cook 3 hours on high or 6 hours on low.
