Description

The recipe features ground chicken sautéed with aromatics including ginger, garlic, and the white part of green onions, flavored with a whisked peanut sauce consisting of peanut butter, sesame oil, honey, soy sauce, and water. Ingredients

  • 1/4 cup peanut butter
  • 1 tbsp sesame oil
  • 1 tbsp water
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1 tbsp hot pepper chopped (optional)
  • 1/4 cup green onions chopped
  • 1 tbsp ginger minced
  • 1 tbsp garlic minced
  • 1 1/2 cups ground chicken
  • 1 cup jicama chopped
  • 1 cup brown rice cooked
  • 6-8 lettuce washed, leaves
  • 1 cup cucumber chopped into semicircles
  • 1/2 cup parsley chopped
  • 1 lime if desired

Instructions

  1. In a small bowl, add peanut butter, sesame oil, water, honey, and soy sauce. Whisk together and set aside.
  2. Pour the olive oil into a large skillet and fry the white end of the green onion, ginger, and garlic (to make it spicy also add hot pepper) on a medium heat setting. After 1 minute, add the ground chicken.
  3. After 3-4 minutes of cooking on medium-high heat, add the mixed peanut sauce ingredients from earlier. Turn off the heat. Add the Jicama and the green end of the onion.
  4. Scoop the chicken mixture and rice onto lettuce leaves.
  5. Add chopped cucumber and parsley. Squeeze some key lime juice on top. Serve and enjoy!

Notes

  • Ground turkey or ground beef can be used as substitute for ground chicken.
