Easy Chicken Mole Recipe

Easy Chicken Mole Recipe features shredded chicken coated in a rich sauce made with chipotle peppers, peanut butter, unsweetened chocolate, and spices. The sauce blends smoky, sweet, and spicy notes and is cooked to develop depth before combining with the chicken. Served over rice or with tortillas, this mole highlights smooth texture and comforting warmth with optional avocado, sour cream, peanuts, lime, and cilantro toppings for added freshness and contrast.

Description

This Easy Chicken Mole Recipe begins by sautéing onion and garlic, then simmering chipotle pepper, adobo sauce, and diced tomatoes with green chiles to build the sauce base. The sauce is blended with peanut butter, chicken broth, chili powder, cinnamon, and seasonings until smooth and cooked down to deepen flavors. The final step melts in unsweetened chocolate before folding in shredded chicken, fully coating it in the complex mole sauce.

The resulting dish balances smoky heat from chipotle and chili powder, slight sweetness and creaminess from peanut butter and chocolate, and warm cinnamon notes. The texture is silky and thick, clinging to tender chicken pieces. It is served traditionally over white rice or with warm tortillas to complement the hearty sauce.

Optional toppings such as avocado slices, sour cream, chopped peanuts, lime wedges, and fresh cilantro add textural contrasts and brightness that complement the mole’s richness. Using shredded rotisserie chicken can simplify preparation, and blending the sauce in a high-powered blender helps achieve a smooth consistency.

Leftovers keep well refrigerated for several days or frozen. The recipe allows for easy adjusting of spiciness and toppings to suit personal preference.
