Description

This recipe begins by flattening boneless, skinless chicken breasts to an even thickness to ensure uniform cooking. After seasoning and flour coating, the chicken is seared to develop a crisp golden crust while retaining juiciness inside. A sauce made from canned diced tomatoes, tomato paste, garlic, dried basil, and oregano is poured over the chicken along with fresh baby spinach leaves. Parmesan cheese is sprinkled on top before baking, which melts over the chicken and binds the flavors together.

The oven finish cooks the chicken through gently while melding the ingredients, resulting in a balanced dish where the bright tomato sauce offsets the richness of the cheese and spinach adds a layer of freshness and color. It can be served alongside pasta or a simple salad.

  • 3 chicken breast Pounded to one inch thick, boneless, skinless
  • ¼ cup flour
  • salt
  • black pepper
  • 1 tablespoon olive oil
  • 1 cup baby spinach leaves
  • 1 oz can diced tomatoes
  • 1 .5 oz can tomato paste no salt added
  • 2 garlic minced, cloves
  • 2 teaspoon basil dried
  • 1 teaspoon oregano dried
  • 1 cup Parmesan Cheese grated

Instructions

  1. Preheat oven to 350 degrees
  2. Using the flat side of a meat mallet, pound chicken breasts to an even thickness, starting in the thickest parts and working out. Pound to about a one inch even thickness
  3. Season Chicken Breasts with salt & pepper on each side.
  4. Put chicken breasts, laid flat, in a zip lock bag, with air expressed, and zipped up.
  5. Open ziplock bag and add flour. close up again and shake bag to coat chicken breasts.
  6. In a bowl, whisk together diced tomatoes, tomato paste, garlic, oregano and basil
  7. Heat an ovenproof skillet over medium-high heat with oil
  8. Transfer chicken breasts to the heated skillet. Sear on each side for 2-3 minutes until crusty and golden on either side. Remove skillet from heat. Distribute spinach leaves over the chicken.
  9. Pour tomato mixture over the chicken.
  10. Evenly divide Parmesan cheese over each chicken breast.
  11. Put the skillet in the center of the oven and bake for 20 minutes or until chicken is cooked through, and cheese is melted and golden.
  12. Serve with hot pasta

Notes

  • This recipe can be made gluten-free by substituting an equal amount of gluten-free flour or cornstarch for all-purpose flour.
  • Jarred pasta sauce can be used instead of a fresh sauce to save time.
  • If you do not have an ovenproof skillet, transfer the seared chicken to a baking dish before baking.
