A broth is prepared by sautéing garlic and ginger, then adding Worcestershire sauce, soy sauce, rice vinegar, pepper, salt, and chicken broth. Shiitake mushrooms and bok choy cook in the broth before adding ramen noodles to finish cooking. Soft-boiled eggs are prepared separately and sliced for garnish. The assembled ramen includes noodles, broth, vegetables, sliced chicken, and eggs, sprinkled with green onions and sesame seeds.

For the Chicken Marinade

  • 2 chicken breast boneless and skinless
  • 1 tbsp Chili garlic sauce
  • 1 tbsp oil
  • 1 tbsp brown sugar
  • 1 tsp black pepper ground
  • salt to taste

To make ramen

  • 2 tsbp neutral cooking oil generic cooking oil
  • 1 tsp ginger grated
  • 1 tbsp garlic minced
  • 1/2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce lite
  • 2 tbsp rice vinegar
  • 1/2 tsp ground black pepper
  • salt to taste
  • 4 cups chicken broth
  • 1 cup shiitake mushroom sliced
  • 1 bok choy
  • 2 packs ramen noodles
  • 2 egg
  • 2 tbsp green onion chopped
  • 1 tsp sesame seeds for garnish

Instructions

  1. In a medium bowl add the chicken breasts, combine chili garlic sauce, oil, brown sugar, ground pepper, and salt. Coat the chicken well and marinate for at least 1 hour.
  2. Heat a skillet and cook the marinated chicken breasts for 12-14 minutes until the chicken is completely cooked. Once done remove the chicken to a cutting board and slice and keep it aside.
  3. Heat about 4qt water on a saucepan and cook the eggs for 7-8 minutes. Remove the shell and cut the soft boiled eggs lengthwise and keep them aside for later use.
  4. For the ramen; heat a large pot with oil. Add garlic and ginger and cook for 2 minutes. Add in the Worcestershire sauce, lite soy sauce, rice vinegar, pepper, salt, and chicken broth and allow to boil.
  5.  Add the sliced mushrooms and bok choy. Cover and cook for 5-7 minutes. Add the ramen noodles and cook for 5 more minutes.
  6. To serve, assemble the ramen noodles along with the broth and veggies. Add the sliced chicken breasts and soft boiled eggs on top. Garnish with scallions and sesame seeds and serve.
