  • 3 chicken breast diced into approximately 2" pieces
  • 16 oz linguine
  • 1/4 Cup butter Divided Evenly
  • 2 cups mushroom sliced
  • 2 tsp garlic minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/4 cup flour
  • 1 1/2 cup chicken broth
  • 1 1/2 cup heavy whipping cream
  • 2/3 cup Parmesan Cheese shredded

Instructions

  1. Cook the linguine based on the package instructions. Drain and save some of the pasta water.
  2. In a large skillet, melt 1/2 of the butter amount over medium heat.
  3. Add the mushrooms and cook until they are tender (approximately 5 minutes).
  4. Next add in the chicken, minced garlic, salt and pepper.
  5. Cook over medium heat until the chicken is golden brown on all sides stirring occasionally (approximately 6-7 minutes).
  6. Remove the chicken and mushrooms from the pan to a separate dish. Leave any remaining sauce in the large skillet.
  7. Then over medium heat, melt the remaining butter in the large skillet.
  8. Whisk in the flour until thoroughly combined.
  9. Then whisk in the broth and heavy whipping cream adding them each slowly.
  10. Then cook the sauce until it thickens, approximately 5-7 minutes.
  11. Toss in the pasta, chicken and mushrooms to combine. Add some of the pasta water if needed to thoroughly combine.
  12. Top with the parmesan cheese, cover the skillet with a lid to melt the cheese and serve immediately!
