Easy Chicken Tikka Sandwich Recipe

This Chicken Tikka Sandwich features marinated chicken breast cooked with yogurt, spices, and optional red food coloring to replicate traditional tikka hues. The chicken is prepared by grilling, air frying, or baking until cooked, then assembled in steak rolls with a mayonnaise-ketchup dressing, shredded mozzarella, bell pepper, onion, carrot, and optional microgreens. The sandwich balances spicy, smoky chicken with creamy dressing and melted cheese, making it a hearty meal option.

Description

The recipe begins by marinating chicken breast tenderloins in a mixture of full-fat yogurt, cooking oil, lemon juice, garlic and ginger pastes, a blend of coriander, turmeric, cumin, and red chili powders, salt, and optional red food coloring. The marinade tenderizes and flavors the chicken, which is then cooked by searing on a grill pan, air frying, or baking. After cooking, the chicken is rested briefly for juiciness.

The mayonnaise and ketchup dressing adds creamy sweetness, spread generously on steak rolls or similar breads. Slices of cooked chicken are layered on the bread, topped with mozzarella cheese which is melted under a broiler, followed by sliced green bell pepper, red onion, shredded carrot, and optionally microgreens for freshness and texture. The sandwich combines smoky, spicy chicken with creamy cheese and crisp vegetables, ideal for lunch or casual dinner.

Adjustments can be made to spice levels and ingredient substitutions per personal taste. The marinade can be left to develop overnight or frozen for convenience, enhancing flavor. The recipe advises using neutral oils for cooking to tolerate high heat and recommends steak rolls for texture similar to crusty French bread.

Notes

  • Use full-fat yogurt in the marinade for a creamier texture in the chicken tikka.
  • Neutral oils like avocado, canola, sunflower, or peanut are best for cooking the chicken at high heat.
  • Adjust red chili powder to taste; 2 teaspoons adds moderate spiciness but can be decreased for milder heat.
  • Red food coloring is optional and can be replaced with red beetroot powder for a natural tint.
  • Steak rolls are preferred bread for this sandwich due to their crusty texture, but alternatives like crusty French bread can be used.
  • Mozzarella cheese melts well here, but provolone or smoked gouda provide interesting flavor variations.
  • Marinate chicken for at least 30 minutes, but overnight or freezing marinated chicken improves tenderness and flavor.
