Easy Chocolate Oatmeal No Bake Cookies are quick treats made by combining butter, sugar, milk, and cocoa powder boiled briefly, then mixed with peanut butter, oats, vanilla, and salt. Dropped onto sheets to cool, they set with a chewy texture and rich chocolate-peanut butter flavor, without baking.

Description

Salted butter, sugar, milk, and unsweetened cocoa powder are heated until bubbling, then boiled briefly. After removing from heat, creamy peanut butter, quick oats, vanilla, and salt are stirred in to form the cookie mixture. This is portioned onto parchment-lined sheets and flattened slightly.

As they cool at room temperature, the cookies firm with a moist and chewy consistency and balanced sweetness combining chocolate and peanut flavors. The use of quick oats adds texture without requiring baking.

This no bake recipe is convenient for making sweet snacks or dessert when oven use is limited, offering a straightforward process that yields tasty chocolate oat treats which store well in airtight containers.

  • 1/2 cup butter salted
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup cocoa powder unsweetened
  • 1/2 cup peanut butter creamy
  • 3 cups quick oats
  • 2 teaspoons vanilla
  • Pinch salt

Instructions

  1. Line two baking sheets with parchment paper. 
  2. In a large heavy pot, combine the butter, sugar, milk, and cocoa powder. Heat over medium heat until it starts to bubble, then set a timer and boil for 60 seconds (no more!).  
  3. Immediately remove from heat and stir in the peanut butter, oats, vanilla, and salt until combined.
  4. Working quickly, drop about 2 tablespoons of the chocolate peanut butter oats mixture at a time onto the prepared cookie sheet, pressing gently on the tops of each cookie to flatten slightly.  
  5. Let the cookies sit at room temperature until cool and firm.  Store in an airtight container.
