Description
This pie uses a custard technique where milk is heated with sugar, then combined with a cocoa, flour, and salt mixture to thicken. Beaten egg yolks are tempered with the hot mixture to prevent curdling, then reintegrated into the pot to further thicken the custard before being flavored with vanilla. The cooked chocolate custard is poured into a baked pie crust to cool and set.

Ingredients
- 1 1/2 cups milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 3 tablespoons cocoa powder
- 3 tablespoons all-purpose flour
- 2 egg beaten, yolk
- 1 teaspoon vanilla extract
- 1 pie shell baked
- Whipped Cream or cool whip
Instructions
- Heat the milk in a medium-sized pot over medium heat.
- Meanwhile, in a bowl, combine the sugar, flour, salt, and cocoa.
- Add the dry mixture to the milk and cook until thickened, stirring constantly.
- Temper the eggs by adding a small amount of the hot milk mixture into the beaten egg yolks and stir. Pour the egg yolk mixture back into the pot, stirring constantly.
- Cook the pudding for at least two minutes.
- Stir in the vanilla and pour the pudding into the pie shell.
- When the chocolate base cools, you can top with Cool Whip or whipped cream.
