Easy Christmas Crockpot Candy

This Easy Christmas Crockpot Candy is a no-bake treat mixing melted white almond bark, semisweet and German chocolates with roasted peanuts. Cooked slowly in a crockpot, the chocolate mixture melts evenly, coating the nuts before being dropped onto sheets to set. Sprinkles can top the clusters for a festive touch, making it a convenient holiday confection.

Description

The recipe starts by combining chopped white almond bark, semisweet chocolate chips, and broken German sweet chocolate in a slow cooker. Cooking at high temperature briefly then lowering heat until fully melted ensures a smooth chocolate base. Adding a kitchen towel under the lid helps manage condensation.

Once melted, dry roasted peanuts are stirred in, evenly coated with chocolate. The mixture is spooned onto wax paper-lined trays in clusters, with optional festive sprinkles added before the candy sets.

Refrigeration accelerates hardening, but leaving clusters at room temperature also works. The candy stores well in a cool place, wrapped airtight, and offers a straightforward solution to making handmade chocolate nut clusters during the holidays.

Due to slow cooker variations, monitoring the melting process is important to avoid overheating or burning the chocolate.

  • 2 lbs white almond bark broken or chopped into smaller squares, might be labeled as white candy coating
  • 12 oz semisweet chocolate chips bag
  • 4 oz German sweet chocolate broken or chopped into smaller squares, bar
  • 32 oz dry roasted peanuts or cocktail peanuts
  • holiday sprinkles (optional)

Instructions

  1. If desired, spray slow cooker insert lightly with non-stick cooking spray.  Add chopped almond bark, chocolate chips and German chocolate.
  2. Place a clean, dry kitchen towel over the top of the slow cooker, then place lid on top of that.  Cook on HIGH for 1 hour.  Reduce heat to LOW, and cook 1 more hour (or until fully melted), stirring every 15-20 minutes.
  3. Remove lid and towel (be careful not to let any condensation drip into melted chocolate), and add peanuts, stirring well to combine.
  4. Line several baking sheets with wax paper.  Drop candy mixture by spoonfuls onto wax paper (or use small cookie scoop).  If using sprinkles, sprinkle onto clusters before they harden.  
  5. Refrigerate (if possible) 30 minutes to 1 hour, until set.  If unable to refrigerate, let stand on counter at room temperature until set.  Store in a cool place in an airtight container.
