EASY Cilantro Lime Rice (Rice Cooker)

This cilantro lime rice recipe uses basmati or jasmine rice cooked in a rice cooker with water or stock, combined with lime zest, fresh lime juice, and minced cilantro. The cooked rice is fluffed and gently mixed with bright, fresh citrus and herb flavors for a fragrant side dish. The simplicity of preparation and use of a rice cooker make it accessible and adaptable to different flavor preferences and cooking conditions.

Description

The recipe starts by rinsing basmati rice until the water runs clear, then cooking it in a rice cooker with water or a broth substitute. Lime zest is added into the cooker before cooking to infuse citrus aroma. After the rice finishes cooking and rests briefly, it is fluffed with a fork to separate grains and then mixed gently with fresh lime juice and minced cilantro, including stems and leaves. This method preserves the rice's texture while imparting tangy and herbal highlights.

The dish balances the nutty fragrance of basmati rice with the sharpness of lime and brightness of cilantro, making it a versatile accompaniment to many meals. The note suggests that jasmine rice or brown rice can be used with adjustments to cooking time and water ratio, offering flexibility.

This cilantro lime rice is ideal as a side dish to Mexican or Asian-inspired meals where a fresh citrus flavor complements proteins and vegetables. The recipe's straightforward process in a rice cooker makes it convenient for everyday cooking.

Ingredients

Servings
  • 1 Cup basmati rice Substitute: jasmine rice. You can even use brown rice but the rice: water ratio will change and the cooking time will increase. Wash till water runs clear, about 3 times.
  • 2 Cups water Substitute: Chicken Stock or Vegetable Stock
  • 1 teaspoon salt Add ½ teaspoon before cooking and ½ teaspoon (or to taste) after the rice has cooked.
  • 1-2 lime You'll need the zest of 1 lime and 2-3 Tablespoons of fresh lime juice
  • 1 large bunch cilantro Stems and leaves, minced. You should have about 4 Tablespoons.

Instructions

  1. Add the washed rice, lime zest, and chicken stock (or veggie stock) to the rice cooker. Cover and press the button to start cooking.
  2. Once the rice has finished cooking, let it sit, uncovered, for 10 minutes.
  3. Uncover, fluff with a fork, then gently fold in the lime juice and cilantro so that it's well-mixed into the rice. (We don't want to crush the rice grains so be gentle.)

Notes

  • Wash rice thoroughly before cooking to remove excess starch for fluffier texture.
  • Substitute jasmine rice or brown rice, adjusting water ratio and cooking time accordingly.
  • Add salt before cooking and adjust seasoning after to taste.
  • Use chicken or vegetable stock instead of water for added flavor.
  • Handle the cooked rice gently to avoid crushing grains when mixing in lime juice and cilantro.
