Easy Cinnamon Bread (No Yeast)

This easy cinnamon bread uses no yeast, relying on baking powder and baking soda for leavening. The loaf features layers of cinnamon and brown sugar swirled into a buttery batter that bakes into a tender, soft crumb with a sweet-spiced flavor. It’s a straightforward quick bread suitable for breakfast, snacks, or dessert without the wait time yeast requires.

Description

Easy Cinnamon Bread (No Yeast) combines basic pantry ingredients to produce a loaf with subtle rise and moist texture. The dry ingredients include all-purpose flour, baking powder, and baking soda to provide leavening without yeast. Sugar and softened butter are creamed, then eggs, buttermilk, and vanilla are incorporated for richness and flavor. The batter is layered with cinnamon and brown sugar mixtures in thirds, creating a distinctive cinnamon swirl inside.

Baked in a standard loaf pan at 350°F, the bread develops a golden crust while staying tender inside. The quick bread is relatively dense compared to yeast breads but offers pleasant sweetness and warmth from cinnamon. It's a versatile treat for morning toast or afternoon snack.

Cooling the bread fully before slicing ensures clean cuts. Using parchment paper or greasing the pan helps with easy removal. Mixing the dry ingredients just until combined avoids toughening the crumb. Adjust baking time as ovens vary to prevent overbaking.

Ingredients

Servings
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • ¼ cup butter softened
  • 2 egg
  • 1 cup buttermilk or sour milk
  • 1 teaspoon vanilla extract
  • 3 tablespoons brown sugar
  • 1 ½ teaspoons cinnamon

Instructions

  1. Preheat oven to 350°F. Grease an 8x4 pan (or line with parchment paper).
  2. Combine flour, baking powder, baking soda and salt in a bowl. Mix well and set aside.
  3. Cream sugar and butter with a hand mixer. Add eggs one at a time and mix well. Add milk and vanilla.
  4. Add in dry mixture and stir with a spoon just until combined.
  5. Combine brown sugar and cinnamon in a small bowl.
  6. Spread ⅓ of the batter into the prepared pan. Sprinkle ⅓ of the brown sugar mixture overtop. Repeat two more times ending with the sugar mixture.
  7. Bake 45-55 minutes or until a toothpick comes out clean.
  8. Cool in the pan 5 minutes. Remove and cool completely on a baking rack.

Notes

  • Use room-temperature ingredients to help batter combine smoothly.
  • Mix dry ingredients only until just combined to prevent a tough texture.
  • Begin checking for doneness around 10 minutes before the suggested baking time, as oven temperatures vary.
  • Cool the bread in the pan briefly before transferring to a rack for complete cooling to maintain crumb structure.
  • Lining the pan with parchment paper makes it easier to remove the loaf without damage.
