Description
This recipe uses six cups of unsweetened shredded or flaked coconut as the base for homemade coconut butter. A Vitamix or similar high-powered blender is recommended to achieve the necessary creaminess. During blending, the coconut releases its oils and creates a smooth, buttery consistency.
Adding a teaspoon of coconut oil is optional to enhance smoothness if desired. The coconut butter can then be poured into a glass storage container and kept in the pantry, making it convenient for use as a spread or ingredient in cooking and baking.
The recipe yields approximately one cup of coconut butter, sufficient for multiple servings or recipe uses. Proper blending technique, such as scraping the sides and using a tamper, helps ensure an even texture.

Instructions
- Add the shredded coconut or flaked coconut to your Vitamix. Add the lid, remove the cap and insert the tamper. Turn the Vitamix on high and use the tamper to push the coconut into the blades. You may need to scrape down the sides halfway through, then continue blending until it's creamy. For a smoother consistency, you can add 1 teaspoon of coconut oil.
