Easy Coconut Milk Alfredo Sauce
Description
Easy Coconut Milk Alfredo Sauce starts by heating coconut milk and almond milk combined with garlic granules, onion powder, nutritional yeast, and salt until boiling. Finely chopped cauliflower is added and cooked briefly to soften, then the mixture is pureed until completely smooth, producing a creamy base without dairy.
The sauce is returned to heat and thickened with arrowroot powder whisked in carefully to prevent clumps, resulting in a well-emulsified, thickened sauce with a slightly nutty, savory flavor from the nutritional yeast that mimics traditional Alfredo cheese notes.
This sauce is ideal for pouring over gluten-free noodles or other pasta alternatives and lends a rich, velvety consistency without cream or butter. It is best used immediately as it thickens further upon standing and may require gentle reheating to loosen.
Proper preparation of the cauliflower—finely chopped or grated—ensures smooth blending and avoids unwanted chunks. Storing leftovers in the fridge is possible but expect a firm texture requiring reheating.
Ingredients
- ¼ cup coconut milk
- 1.5 cup almond milk
- ½ teaspoon onion powder
- ½ tbs garlic granules
- 1 teaspoon salt
- ⅛ cup nutritional yeast
- ½ cup cauliflower finely chopped
- 1 tbs arrowroot powder
Instructions
- Combine the milks, garlic, nutritional yeast, and salt in a small pot just over medium heat.
- Mix and bring to a rolling boil. Add in the cauliflower and cook for 4 minutes at a rolling boil to soften the cauliflower. Stir occasionally.
- Transfer to a high powdered blender and process until ultra smooth.
- Place it back in the pot and bring it back to a rolling boil.
- Add in the arrowroot powder and whisk immediately for one full minute so that no clumps remain. Cook for 1 one more minute then turn off and let sit.
Notes
- Finely chop or grate the cauliflower to ensure it cooks quickly and blends smoothly.
- Use the sauce immediately for best texture as it thickens significantly on standing.
- If stored in the fridge, gently reheat over low heat while stirring to loosen the sauce.
- Whisk the arrowroot powder in slowly and continuously to avoid lump formation.
- This recipe yields about 1 1/3 cups; one serving is approximately 1/3 cup.
