The rice is then simmered gently in the liquid, covered, to allow it to cook evenly. After simmering, the rice rests covered off the heat so it finishes cooking in its own steam, which enhances the texture. This method produces rice with a tender bite and a subtle coconut aroma. Adding crushed cashew nuts on top offers a pleasant contrast in texture and a nutty accent. Ingredients
- 360 g long grain white rice
- 400 ml coconut milk
- 300 ml water
- 0.5 teaspoon salt sea salt
Instructions
- Rinse the rice under cold water until the water runs clear.
- Put the rice into a saucepan and cover with the water.
- Add the coconut milk and salt. Gently mix.
- Bring to the boil. Turn the heat to its lowest and cover the pan with a lid. Simmer for 10 minutes.
- After 10 minutes, turn the heat off. Leave the lid on the pan and let stand for a further 10 minutes. The rice will continue to cook in the steam.
- Use a fork to fluff the rice up.

- Rinse the rice thoroughly under cold water until the water runs almost clear to remove excess starch and avoid gluey texture.
- Mix coconut milk with water for cooking as pure coconut milk alone is too thick.
