  • 360 g long grain white rice
  • 400 ml coconut milk
  • 300 ml water
  • 0.5 teaspoon salt sea salt

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Put the rice into a saucepan and cover with the water.
  3. Add the coconut milk and salt. Gently mix.
  4. Bring to the boil. Turn the heat to its lowest and cover the pan with a lid. Simmer for 10 minutes.
  5. After 10 minutes, turn the heat off. Leave the lid on the pan and let stand for a further 10 minutes. The rice will continue to cook in the steam.
  6. Use a fork to fluff the rice up.

Notes

  • Rinse the rice thoroughly under cold water until the water runs almost clear to remove excess starch and avoid gluey texture.
  • Mix coconut milk with water for cooking as pure coconut milk alone is too thick.
  • Add crushed cashew nuts as a garnish before serving to introduce a contrasting crunchy texture.
