Ingredients
- 240 g zucchini grated and liquid squeezed out, aka courgette
- 2 egg
- 65 g plain flour
- 1 teaspoon baking powder
- 1 pinch sea salt
- 1 pinch black pepper
- 40 g feta cheese
- 2 tablespoon mint chopped, fresh
- 60 g peas thawed, frozen
- 0.5 tablespoon olive oil
- tzatziki for serving
Instructions
- Grate 240 g Courgette (zucchini) and then squeeze out the excess liquid and discard (or add to green smoothies). Set the grated courgette aside.
- In a large bowl, whisk 2 Eggs and then add 65 g Plain flour and 1 teaspoon Baking powder and 1 pinch Sea salt and ground black pepper.
- Add the grated courgette, 60 g Frozen peas, 40 g Feta and 2 tablespoon Fresh mint and gently mix it in to form a batter.
- Heat 0.5 tablespoon Olive oil in a pan and then add spoonfuls of batter to make fritters around 10cm (4 inch) in diameter. Fry for 2 minutes each side.
- Serve with Tzatziki.
Notes
- Adding grated carrot alongside the courgette introduces extra color and sweetness.
- Feta can be replaced by Stilton or Parmesan; Parmesan helps create a crisper fritter.
- Fresh mint may be swapped for parsley, coriander, dill, or chives depending on preference.
