Description

This recipe starts by slicing chicken breasts thinly, seasoning them with salt, paprika, and pepper, then pan-frying to a golden finish. The sauce is developed in the same pan by frying onion, garlic, and oregano until fragrant before adding tomato passata and cream. The sauce simmers gently to blend the tomato and cream flavors, then Parmesan is stirred in to add richness and depth.

The chicken fillets return to the pan with their resting juices to absorb the sauce flavors, cooking together briefly so the dish finishes with tender meat coated in a creamy, flavorful tomato sauce. Fresh basil added at the end brightens the dish.

Ingredients

  • 500 g (1lb) chicken breast
  • 1 tsp salt
  • 1 tsp paprika
  • ½ tsp black pepper

For the tomato sauce

  • 1 onion finely chopped
  • 4 garlic crushed, cloves
  • 1 tsp oregano
  • cups tomato passata
  • ½ cup cream
  • ½ cup Parmesan Cheese grated
  • salt
  • black pepper
  • sugar optional, pinch of
  • basil to serve, fresh

Instructions

  1. Place chicken breasts on a chopping board in front of you and with a sharp knife, carefully slice each in half resulting in two thin fillets.
  2. Drizzle with olive oil and season generously with salt, pepper and paprika on both sides. 
  3. Heat a large frying pan over medium-high heat.
  4. Add the chicken and cook for 2-3 minutes per side until the chicken is golden brown and cooked through. Remove from the pan and set aside. 
  5. In the same pan, fry the onion, garlic and oregano in a splash of olive oil until soft and fragrant.
  6. Pour in the passata/tomatoes and cream.
  7. Season with salt and pepper and allow to simmer gently for 5 minutes. Stir in the Parmesan cheese.
  8. Add the chicken back to the pan along with any resting juices and allow to simmer for another minute or two. 
  9. Top with basil and serve.
