Easy creamy mushroom toast uses roughly a pound of your favorite cleaned and chopped mushrooms, fried in a pan until well-browned to deepen their flavor. Garlic, dried oregano or thyme, and chili flakes are added toward the end to infuse heat and aromatics. Butter and lemon juice combine to form a lightly creamy sauce that coats the mushrooms. This mixture is served hot over toasted bread slices, which can be smeared with cream cheese for extra creaminess. Ingredients

Servings
  • 500 g (+- 1lb) mushrooms cleaned and chopped, of your choice
  • 3-4 garlic crushed, cloves
  • 1 tsp chili flakes or red pepper flakes
  • 1 tsp dried oregano or thyme
  • 2 tbsp butter
  • lemon juice of half
  • salt to taste
  • black pepper to taste
  • parsley for serving, chopped
  • 4 lices bread toasted, of your choice
  • cream cheese (optional)

Instructions

  1. Heat a large frying pan over high heat then add a tablespoon or two of olive oil. 
  2. Fry the mushrooms in batches, until well-browned all over. 
  3. Add all the mushrooms back to the pan with their resting juices and add the garlic, herbs and chilli flakes. Cook for 1-2 minutes. 
  4. Add the butter and lemon juice and stir well while the butter is melting to create a creamy sauce then take off the heat. Season to taste. 
  5. Serve the creamy mushrooms on toast smeared with cream cheese (optional).
