Easy Crock Pot Chicken Scampi Recipe
Description
Easy Crock Pot Chicken Scampi is a slow-cooked dish utilizing boneless, skinless chicken breasts sliced and combined with sliced red onion, red and green bell peppers. These ingredients slowly cook in chicken broth infused with Italian seasoning, minced garlic, salt, and black pepper over 6-8 hours until everything is tender. After cooking, the chicken can be shredded and mixed back with the vegetables and broth. This mixture is served over cooked angel hair pasta with a generous topping of Parmesan cheese.
The slow cooking process softens the peppers and onions, blending their flavors well with the seasoned chicken and broth, resulting in a moist dish with tender chicken and light vegetable texture. The Parmesan adds a salty, creamy finish to the meal.
This recipe suits those who want a hands-off approach to a chicken pasta dinner, allowing the crock pot to do most of the work and delivering meltingly tender chicken and flavorful vegetables combined in a mild, savory sauce. The pasta serves as a neutral base to soak up the sauce.
Notes suggest a simple method to thicken the sauce by whisking cornstarch with cold water and stirring it in if a thicker consistency is preferred, offering an easy adjustment to suit personal taste.
