Easy Crockpot Black Beans

This Easy Crockpot Black Beans recipe uses dried black beans cooked slowly in water, optionally with onion, garlic, and seasonings. The long, unattended cooking yields tender beans with a soft texture. The dish serves as a fundamental base for various meals or as a standalone side, providing comforting and simply prepared legumes without extensive hands-on time.

Description

Start by rinsing and sorting a pound of dried black beans, removing broken ones. The beans go into a slow cooker with six cups of water along with any optional seasonings such as chopped white onion, garlic cloves, salt, and black pepper. The slow cooker runs on high for about 3.5 hours, though the duration may vary based on altitude and bean freshness. Check for tenderness near the end and extend cooking if needed.

The slow cooking method allows the beans to soften fully without requiring active attention, resulting in beans that are tender yet intact. Flavorings like onion and garlic add aromatic depth. The beans can be used in a variety of dishes or enjoyed as a simple side.

This hands-off approach is ideal for planning meals ahead or freeing up time in the kitchen. Serve with rice, in salads, or as a filling in tacos or burritos according to preference.

The recipe provides approximate nutritional information per half-cup serving, emphasizing the beans as a wholesome legume choice.

Ingredients

Servings
  • 1 pound black beans rinse and sort, dried, in a bag
  • 6 cups water

OPTIONAL EXTRAS

  • 1-2 cups onion white, chopped
  • 3 cloves garlic
  • salt to taste
  • black pepper to taste

Instructions

  1. Grab a one-pound bag of black beans.
  2. Rinse with water and pluck out any broken ones.
  3. Pour into your slow cooker and add 6 cups water and any extras you'd like to add to season the beans.
  4. Turn on to HIGH and set a timer for 3.5 hours.
  5. Now walk away! Your beans will be perfectly cooked in anywhere from 3.5-4 hours. (Though it will take a little longer if you live at a high altitude.)  I check mine at the 3.5 hour mark and try one to see if they're tender enough.  If they're still hard, set your timer for an extra 30 minutes and curl up with a book or catch up on that pile-o-laundry!

Notes

  • Rinse and sort dried beans, removing any damaged ones before cooking.
