Description

The preparation involves grating cucumber after checking for any bitter or sour taste to ensure freshness. English or Persian cucumbers are peeled and grated; regular cucumbers have their seeds scraped out before grating. The grated cucumber is combined with properly whisked yogurt, salt to taste, roasted cumin powder, and optional chaat masala and chopped cilantro. A slit green chili can be added during mixing for subtle heat, later removed for serving.

Garnishing with roasted cumin powder, Kashmiri red chili powder, and mint leaves adds color and complementary flavors. The result is a creamy, cool side dish with mild spice and herbaceous accents.   • 1 cup cucumber grated
  • 2 cup PLAIN yogurt whisked
  • 1/4 teaspoon salt adjust to taste
  • 1/2 teaspoon ground cumin roasted, aka Jeera powder
  • 1/2 teaspoon chaat masala optional
  • 2 tablespoon cilantro finely chopped, leaves
  • 1/2 green chili slit, optional
  • mint For garnish, leaves
  • 1/4 teaspoon Kashmiri red chili powder Adjust to taste, for garnish

Instructions

  1. Wash, peel, and grate cucumber. Taste the cucumber before grating, if it has a bitter or has sour taste, then don't use it. If using English or Persian cucumber, peel, and grate. If using regular cucumbers, slice lengthwise and scrape out seeds using a spoon. Then grate the cucumber. 
  2. Now in a bowl add whisked yogurt, salt, roasted ground cumin, chaat masala, cilantro leaves, green chili (optional), grated cucumber, and mix it well.
  3. Transfer to a serving bowl. Remove the slit green chili, if added. Garnish with roasted cumin powder, red chili powder, and mint leaves. And it's ready, have it immediately or refrigerate before serving.

Notes

  • Taste cucumbers before grating and avoid those with any bitterness or sourness.
  • English or Persian cucumbers should be peeled before grating; for regular cucumbers, slice lengthwise and scoop out seeds prior to grating.
  • If yogurt is too sour, adding a little sugar can help balance the flavors.
