Easy Easter Cookies with M&M Bunnies

These Easter Cookies are packed with pastel M&Ms and chocolate chips and topped with more M&Ms shaped into a bunny. They are so fun to make for Easter family gatherings!

Ingredients

  • 8 tablespoons butter salted, softened
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • cup M&M candy plus extra for on top, Easter colored
  • cup chocolate chips semi-sweet

Instructions

  1. Preheat the oven to 350° F and line a baking sheet with parchment.
  2. In a large mixing bowl, ad the butter and sugars and blend together 1-2 minutes on medium speed.
  3. Add the egg and vanilla extract and blend until combined.
  4. In a separate mixing bowl, add the flour, baking soda, and salt and whisk together.
  5. Gradually add the dry ingredients to the butter and sugar mixture and blend just until it is barely blended.
  6. Then add the M&Ms and chocolate chips, and gently fold them into the dough.
  7. Using a cookie scoop, scoop the cookies onto the lined baking sheet.
  8. Bake 9-10 minutes.
  9. After removing from the oven, add extra M&Ms into the tops of cookies and create the bunny shapes by cutting the M&Ms in half and pressing them into the cookies.

Notes

  • Use gluten free one-to-one flour if needed. Use any chocolate chips you would like like mini chocolate chips or milk chocolate chips.
