Ingredients

  • ½ cup lemon juice about 3-4 lemons
  • 2 teaspoon lemon zest
  • 3 tablespoon cornstarch
  • ½ cup granulated sugar
  • ¼ teaspoon turmeric powder
  • 1 cup water
  • 2 tablespoon coconut oil

Instructions

  1. Prepare the Mixture: In a small saucepan, whisk together the lemon juice, zest, sugar, cornstarch, and turmeric.
  2. Add Water Until Dissolved: Slowly add the water while continuously stirring to avoid lumps.
  3. Cook the Curd: Place the saucepan over medium heat and cook. Stir constantly to avoid buring. Cook until the mixture starts to thicken and bubble, about 5-7 minutes.
  4. Add Coconut Oil: Remove from heat and stir in the coconut oil until the mixture is smooth and glossy.
  5. Cool: Transfer the curd to a bowl. Cover with plastic wrap, touching the surface to prevent skin formation. Chill in the refrigerator until set.
