Easy Enchilada Casserole
Description
Easy Enchilada Casserole combines browned ground beef sautéed with onion and garlic, then simmered with salsa, refried beans, enchilada sauce, and sliced olives to create a rich meat sauce. This sauce is layered with corn tortillas and cheese in a baking dish and baked until bubbly and the cheese is melted. Ingredients
- 2 TB olive oil
- 1 lb ground beef or ground turkey, lean
- 1 onion chopped
- 6 cloves garlic chopped
- 2 cups salsa thicker the better, chunky
- 16 oz refried beans
- 1 ½ cups enchilada sauce
- 1 cup olives sliced
- 18 whole corn tortillas 6-inch size, sliced in half
- 4 cups Mexican blend cheese shredded

Instructions
For the Sauce
- In large, heavy skillet, sauté onion and garlic with olive oil for one minute. Add ground meat and cook until browned. Drain if needed.
- Stir in salsa, refried beans, enchilada sauce, and olives. Bring to a boil, and immediately reduce to simmer. Cook and stir for 5 minutes. Remove from heat.
To Assemble
- Layer half of the corn tortillas on bottom of a greased 13x9 baking dish. Cover with half of the meat sauce. Sprinkle on half of the cheese. Repeat layers.
- Cover tightly with foil, and bake 20 minutes at 375F. Remove cover and bake another 5 minutes until cheese is nicely melted. Garnish as desired and serve hot.
Notes
- Prepare the casserole a day ahead by assembling and refrigerating it; add extra bake time if baking straight from the fridge.
- Serve with crispy tortilla chips, guacamole, or fresh salsa to complement the casserole's flavors.
- Garnish with chopped green onions, diced avocado, sour cream, or chives to add fresh accents and richness.
