Ingredients

  • 2 TB olive oil
  • 1 lb ground beef or ground turkey, lean
  • 1 onion chopped
  • 6 cloves garlic chopped
  • 2 cups salsa thicker the better, chunky
  • 16 oz refried beans
  • 1 ½ cups enchilada sauce
  • 1 cup olives sliced
  • 18 whole corn tortillas 6-inch size, sliced in half
  • 4 cups Mexican blend cheese shredded
  • green onion garnishes: chopped green onions or chives, diced avocado, salsa, or sour cream

Instructions

For the Sauce

  1. In large, heavy skillet, sauté onion and garlic with olive oil for one minute.  Add ground meat and cook until browned.  Drain if needed.  
  2. Stir in salsa, refried beans, enchilada sauce, and olives.  Bring to a boil, and immediately reduce to simmer.  Cook and stir for 5 minutes.  Remove from heat.

To Assemble

  1. Layer half of the corn tortillas on bottom of a greased 13x9 baking dish.  Cover with half of the meat sauce.  Sprinkle on half of the cheese.  Repeat layers.  
  2. Cover tightly with foil, and bake 20 minutes at 375F.  Remove cover and bake another 5 minutes until cheese is nicely melted.  Garnish as desired and serve hot.

Notes

  • Prepare the casserole a day ahead by assembling and refrigerating it; add extra bake time if baking straight from the fridge.
  • Serve with crispy tortilla chips, guacamole, or fresh salsa to complement the casserole's flavors.
  • Garnish with chopped green onions, diced avocado, sour cream, or chives to add fresh accents and richness.
