Easy Fruit Pizza Recipe
Description
This recipe starts by unrolling refrigerated crescent rolls and pressing them together to form a flat crust in a rectangular pan or on a cookie sheet. Baking at 375°F until puffed and golden creates a flaky, crisp foundation.
The cream cheese frosting is beaten until smooth with granulated sugar and vanilla extract, which is spread over the cooled crust before topping with fresh, assorted fruit. Strawberries, blueberries, kiwi, and other fruits add color, flavor, and juicy texture contrasts.
Fruit pizza is best served shortly after assembly to maintain the crust's crispness and prevent the cream cheese layer from becoming soggy. The recipe allows for variations in crust and frosting types, as well as serving as smaller individual pizzas for ease or children.
Leftovers should be refrigerated and consumed within two days as the crust may soften over time. Glazing fruit with thinned apricot jam or honey can add shine and help preserve fruit freshness for brief periods.
Ingredients
- 2 tubes crescent rolls refrigerated
- 12 ounces cream cheese at room temperature
- ⅓ cup granulated sugar
- ¾ teaspoon vanilla extract
- Fruit for topping, assorted
Instructions
- Preheat oven to 375 degrees F.
- Unroll the crescent rolls and press into a 10x15-inch pan (or place on a parchment paper-lined cookie sheet), making sure to seal any seams. Bake until puffed and golden brown, 11 to 13 minutes. Place the pan on a wire rack to cool completely.
- Using an electric mixer, beat the cream cheese at medium speed until soft and smooth, about 2 minutes. Gradually add the sugar and beat until completely combined, then mix in the vanilla extract. Using an offset spatula, spread the cream cheese mixture over the cooled crust.
- Top with assorted fruit of your choice. Serve immediately, or cover and refrigerate for up to 2 days.
Notes
- You can prepare the crust and cream cheese frosting a day ahead but add fruit just before serving to keep the crust crisp.
- Varieties of crust include sugar cookie bars, shortbread, oatmeal crumb crust, or store-bought sugar cookie dough.
- Frosting alternatives like vanilla buttercream or chocolate ganache can be used according to preference.
- Recommended fruits include strawberries, blueberries, raspberries, blackberries, pineapple, kiwi, mango, oranges, grapes, peaches, and nectarines.
- For mini fruit pizzas, cut rounds from the crescent dough to create individual servings.
- Using a round pizza pan shapes the crust traditionally, and brushing fruit with thinned apricot jam adds a glossy finish.
- Store leftovers covered in the refrigerator for up to 2 days, noting the crust will become soggy after the first day.
