Easy Fudge (Microwave or Stovetop)

This Easy Fudge recipe uses semi-sweet chocolate chips and sweetened condensed milk to create a creamy, rich fudge that can be prepared either on the stovetop or in the microwave. The addition of vanilla extract and optional nuts adds flavor depth and texture. The fudge sets firm after chilling, making it easy to cut into squares for snacking or gifting.

Description

The core ingredients—semi-sweet chocolate chips and sweetened condensed milk—melt together over low heat or gently in the microwave, resulting in a smooth, glossy mixture. Constant stirring prevents burning and ensures even melting. Vanilla extract enhances the chocolate's flavor. Chopped walnuts or pecans can be stirred in for a crunchy contrast, but their inclusion is optional.

After pouring the mixture into a buttered, parchment-lined pan, chilling for about two hours allows the fudge to firm up. The clean cuts into squares maintain their shape well, making it convenient for portioning. Alternative ratios or types of chocolate chips can be used for flavor variations, such as mixing milk and semi-sweet chocolates.

This straightforward recipe is adaptable for home cooks using either conventional stovetop methods or microwave heating. The key is careful monitoring during melting to avoid scorching. Once set, fudge can be stored at room temperature or refrigerated to maintain texture depending on preference.

Ingredients

Servings
  • 3 cups (18 oz) semi-sweet chocolate chips
  • 1 (14 oz) can sweetened condensed milk
  • 1 pinch salt
  • 1 1/2 tsp vanilla extract
  • 1 cup walnuts optional, chopped, or pecans

Instructions

  1. Butter and line an 8-inch square baking dish with parchment paper (leaving a 1-inch overhang on all sides), butter parchment.

Stovetop Instructions

  1. In a medium saucepan stir together chocolate chips, sweetened condensed milk and salt.
  2. Cook over low heat, stirring constantly until chocolate chips have melted.
  3. Remove from heat, stir in vanilla and nuts. Pour into prepared baking dish and spread into an even layer.
  4. Chill until set, about 2 hours. Lift from pan using parchment then cut into squares.

Microwave Instructions

  1. In a medium microwave safe bowl stir together chocolate chips, sweetened condensed milk and salt.
  2. Heat in microwave on 50% power in 30 second increments, stirring well between intervals, until melted and smooth (it should take about 5 - 6 cooking periods).
  3. Stir in vanilla and nuts. Spread into prepared dish and chill until set, about 2 hours. Cut into squares.

Notes

  • Use a parchment-lined pan with overhang for easy removal and clean slicing.
  • Constantly stir chocolate and condensed milk while melting to prevent burning.
  • Walnuts or pecans add texture but can be omitted for a smooth fudge.
  • To vary sweetness and flavor, substitute some semi-sweet chips with milk chocolate chips.
