Easy fudgy chocolate brownies
Description
This recipe starts by mixing melted butter and canola oil with white and brown sugars to create a sweet base. Eggs, yolks, and vanilla add richness and bind the batter. Cocoa powder and flour, sifted with salt, produce a smooth and dense batter when combined. Chocolate chips folded in add bursts of melted chocolate within the baked brownies.
Baked at 180°C (350°F) in a lined pan for 20-25 minutes, the brownies are done when a skewer comes out with moist crumbs, ensuring fudginess over cakiness. After cooling fully in the pan, they are cut into squares revealing a tender, chewy inside with a slightly crisp top.
Ingredients
- ½ cup butter melted
- ½ cup canola oil
- 1 cup white sugar
- 1 cup brown sugar soft
- 3 egg
- 2 egg yolk
- 1 tsp vanilla
- 1 cup cocoa powder
- 1 cup flour
- 1 tsp salt
- 1 cup chocolate chips
Instructions
- Preheat the oven to 180°C/350°F and line a 20cm x 20cm (approximately 8in x 8in) cake pan with parchment paper.
- In a large mixing bowl, mix the butter and oil with the sugars.
- Add the eggs, egg yolks and vanilla and mix well.
- Sift in the cocoa powder, flour and salt. Mix until just combined.
- Stir in the chocolate chips or nuts if using.
- Transfer the batter to the prepared cake pan then place in the oven.
- Allow to bake for 20-25 minutes until a skewer inserted comes out with moist crumbs.
- Remove from the oven and allow to cool completely in the pan before removing and cutting into portions.
