  • ½ cup butter melted
  • ½ cup canola oil
  • 1 cup white sugar
  • 1 cup brown sugar soft
  • 3 egg
  • 2 egg yolk
  • 1 tsp vanilla
  • 1 cup cocoa powder
  • 1 cup flour
  • 1 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 180°C/350°F and line a 20cm x 20cm (approximately 8in x 8in) cake pan with parchment paper.
  2. In a large mixing bowl, mix the butter and oil with the sugars.
  3. Add the eggs, egg yolks and vanilla and mix well.
  4. Sift in the cocoa powder, flour and salt. Mix until just combined.
  5. Stir in the chocolate chips or nuts if using.
  6. Transfer the batter to the prepared cake pan then place in the oven.
  7. Allow to bake for 20-25 minutes until a skewer inserted comes out with moist crumbs.
  8. Remove from the oven and allow to cool completely in the pan before removing and cutting into portions.
